Waikiki Meatballs:

Meatballs with a nice tropical pineapple sauce.
Gluten Free kids. Use white rice. 

Prep time: 10 minutes
Cook time: 15 minutes


Make meatballs according to taste. Or just buy them. Homestyle work best for this recipe.

Ingredients:

• 1 c – pineapple juice from the can of pineapple (below)
• 2 TBS – cornstarch
• 1 tsp – ginger
• ½ c – brown sugar
• 1/3 c – vinegar (white is preferred, or cider)
• 1 TBS – soy sauce
• 1 15 oz can pineapple tidbits or chunks

Method:

Cook first 6 ingredients over medium heat stirring constantly until mixture thickens.
Boil for one minute.  Add meatballs and drained pineapple tidbits or chunks.  Heat through and serve.

Best served over white rice.
I have also done this with saute’d red bell peppers and onions.
