Ultra Crispy Smashed Potatoes
Crazy crispy on the outside and fluffy on the inside

INGREDIENTS:
- 1lb small potatoes
- 1 tbsp salt (for boiling)
- 2 TBS butter , melted
- 1 tbsp olive oil
- Salt and Pepper for sprinkling
- Finely chopped parsley , optional garnish
DIRECTIONS:
- Cook the potatoes, mini potatoes can be microwaved in a vented container
- Preheat the ovent to 400°F
- Let the potatoes sit for 5 minutes, this will allow them to steam a little bit more and dry on the outside.
- SMASH the potatoes down flat, let sit for another few minutes to steam off.
- Move all the potatoes to a partchment or foil lined baking sheet.
- mob or drizzle butter on all potatoes then cover with the oil to ensure crispiness.
- Sprinkle with salt and pepper
- Bake 45-55 minutes, watch to not burn. look for a deep golden look.
- Garnish with parsley if wanted.
