This one for my kids:

Prep time: 5 minutes
Cook time: 1 hour
Total Time: 1 hour 5 minutes
Servings: 4

INGREDIENTS:

  • 4 medium-large russet potatoes
  • Extra-virgin olive oil
  • Sea salt

DIRECTIONS:

  • Preheat the oven to 425°F
  • Wash and dry the potatoes
  • Use a fork to stab each potato a few times then place them in a bowl
  • Drizzle olive oil over the potatoes and rub it in with your hands
  • Sprikle sea salt all over the potatoes and rub that in as well
  • Bake the potatoes for 1 hour. Internal temp should be around 210.
  • Serve hot!

NOTES:

  • Serve with sour cream, bacon bits, green onions, cheese or chili.
  • Cut the potato in half, carve out the inside, fill the skin with butter and let it sit to melt while you eat the rest of the potatoes.
