Garlic Parmesan Chicken

Ingredients
- 4 small-medium chicken breasts or 2 large halved
- salt and pepper to taste
- 2 Tablespoons olive oil
- 4-5 cloves garlic minced
- 2 Tablespoons butter
- 1 cup heavy cream
- 1 tablespoons Italian seasoning or oregano (or a mix of both!)
- 1/2 cup parmesan cheese freshly grated (not pregrated)
- 4-5 oz sliced or chopped Crimini or baby bella mushrooms
- 2 cups spinach chopped
DIRECTIONS:
- Season chicken with salt and pepper. Heat olive oil in a large heavy skillet or pan. Add chicken to the pan and cook for 5-6 minute per side or until the outside is golden and the chicken is almost cooked through (cooking times will vary depending on the thickness of the chicken breasts, I like to undercook at this stage so it doesn’t overcook at the end).
- Remove chicken from the pan, reduce heat to low-medium, and add garlic; stir for 30 seconds. Add mushrooms and butter, saute until mushrooms are soft.
- Add the cream, Italian seasoning, and parmesan cheese. Stir to combine.
- Stir in spinach one handful at a time. Wilt, add more until desired amount is reached.
- Return chicken to the pan and simmer until chicken is done. Mix well together.
Serving Suggestions:
- Serve with pasta or veggies.
