INGREDIENTS:

  • 1½ teaspoons paprika
  • 1½ teaspoons light brown sugar
  • 1 teaspoon dried oregano
  • ¾ teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon salt
  • 4-6 tilapia fillets
  • 1 lime, cut into wedges (optional, for serving)
  • 2 tablespoons olive oil, for cooking

DIRECTIONS:

  • Begin by preheating the oven to 375.
  • IF USING FROZEN TALIPIA: Place frozen fillets onto a backing pan, cover all fillets with olive oil and bake for 5 minutes before applying seasonings.
  • Combine the paprika, brown sugar, oregano, garlic powder, cumin, cayenne pepper and salt in a small bowl; mix until well combined (use your fingers to break up the lumps of brown sugar). Sprinkle the spice rub evenly over the fillets, no need to put anything on the bottom side.
  • Bake for an additional 13-15 minutes until fillets are flaky but not dry.

NOTES:

You can use the same rub if you want to pan-fry your fillets, just add the seasoning to both sides of the fish and use the olive oil in the heated pan. Pan fry for 2-3 minutes per side.
