London Broil – Sous Vide

Who could have known a cheap cut of meat could taste so good!

Preptime: About 10 minutes
Cook Time: ~8 hours
Servings: 5-6

First off, you’re going to want to marinate your meat overnight for best flavor. So count on this. I also recommend covering the sliced meat with the below Herb Butter mix.

Ingredients

– 1 (2-3-lb.) London broil top-round steak
– Kosher salt
– Freshly ground black pepper
– 1/4 c. extra-virgin olive oil
– Juice of 1/2 lemon (1-2 tbsp)
– 2 tbsp. packed brown sugar
– 1 tbsp. Worcestershire sauce
– 4 cloves garlic, minced

*FOR THE HERB BUTTER
– 1/2 c. (1 stick) butter, softened
– 1 tbsp. freshly chopped parsley
– 2 tsp. freshly chopped chives
– Zest of 1/2 lemon
– 1/2 tsp. kosher salt
Pinch crushed red pepper flakes

DIRECTIONS:

Step One (The Marinade)

  1. Season your London Broil generously with Salt and Pepper
  2. In a medium bowl, whisk together oil, lemon juice, brown sugar, Worcestershire, and garlic.
  3. Put the Meat in a ziploc and cover it with the marinade. Stick it in the fridge overnight.

The Next day:

  1. Set your SV for 8 hours @ 135 f (or your choice, i found this favorable to me and my family)
  2. At dinner time, pull the meat and rest it in an ice bath for 10 minutes
  3. Prep your hot skillet or sear method.
  4. Pull the meat from the bag, Dry it off and brush off the garlic chunks, you dont want them burning.
  5. Sear your meat, rest it for 15-20 minutes then slice away.
  6. While your meat is resting, make your herb butter!

Serving suggestion:
Herb butter on top after slicing. I serve my London Broil with Saute’d mushrooms and Green beans with mashed potatoes on the side.. or something like that.
