Smashed Potatoes

Buttery, crispy SMASHED POTATOES! Crazy crispy on the outside and fluffy on the inside,
Preptime: About 10 minutes
Cook Time: ~1 – 1.5hrs
Servings: 5-8
Ingredients:
– 1.5 lb small potatoes (red/yellow are best)
– 3 TBS butter , melted
– 1 TBS olive oil
– Salt and pepper
Optional toppings:
– Finely chopped parsley
– Shredded Cheeses
Instructions:

Bring a big pot of water to boil
- While the water is heating, wash your potatoes
- Boil your potatoes for 20-25 minutes, larger potatoes might take 30.
- Drain your potatoes into a colander and let them sit for 5 minutes
- Preheat your oven to 350f
- Place the potatoes on a baking sheet and, with a potato masher or large fork, squish those potatoes down!
- Let potatoes steam for another 5 minutes and dry out a little. This will add to the crispiness.
- Melt your butter
- Spread melted butter over the potatoes
- Spread olive oil over the potatoes
- Salt and Pepper as you want
- Bake in the oven for 40 minutes or until crisp
Serving Suggestions
- After pulling your potatoes from the oven, shred some cheese over them and throw them back in to melt the cheese.
- Or, Chop up some parsley and sprinkle it over the top.
- Or even serve it normally with baked potato toppings like Sour Cream, Bacon Bit, Green onions/chives etc.
